I made a roasted vegetable tart for the occasion. My husband's birthday was May 21, so I bought him a bottle of his favorite wine. He decided to save it and not drink it on his birthday.

ROASTED VEGETABLE TART
A colorful medley of roasted veggies sits on top of a pesto, goat cheese spread, arranged on top of puff pastry.
INGREDIENTS:
- 1 Sheet Puff Pastry- Half of 17.2 package
- 2 Zucchini cut into 1/4" diagonal cut slices
- 1 yellow Squash cut into 1/2" diagonal cut slices
- 1 Tablespoon olive oil
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 4 carrots - cut into 1/8" diagonal slices
- 1 log Goat Cheese- 4 oz. room temperature
- 2 Tablespoons Pesto
INSTRUCTIONS
- Preheat oven to 400°F. Coat baking sheet with cooking spray. On surface lightly dusted with flour, unroll dough; with rolling pin, roll out into 12" square. Transfer to baking sheet. Lightly brush 1/4"-wide strip of water around edges of dough; fold over to create border. At corners, twist dough together. With fork, prick bottom of tart shell. Bake 25-30 minutes until browned and baked through. Cool.
- Increase oven to 450°F. Coat 2 rimmed baking sheets with cooking spray. Toss zucchini and squash with oil, seasoning, salt and pepper. Arrange in single layer on baking sheets. Roast 5-6 minutes or until just tender. Remove from baking sheets. Cool baking sheets slightly.
- Combine goat cheese and pesto and spread in bottom of tart shell. Starting from edge, arrange vegetables over cheese mixture. Enjoy!

Linda, Your tart looks scrumptious!! Happy Birthday to your hubby -- I'm sure he enjoyed the wonderful treat with his favorite wine. Yesterday I went into my local vineyard to buy a rosé which I like mainly because the label has a beautiful Lady Godiva painting on it, and they told me there would be no rosé until June 10, which is National Rosé wine day! Another reason to celebrate coming soon! Linda
ReplyDeleteOh! That looks so good! I LOVE wine. Hubby and I are members of 6 winery wine clubs in the Hill Country of Texas... Today I stopped by Trader Joe's for an inexpensive bottle after work (Cocobon, so good!) and the cashier told me it was Wine Day. Well, when is it NOT? (:

ReplyDeleteOh, this sounds fun. The roasted vegetable tart looks scrumptious, and these are beautiful red roses. The girls love to have a glass of wine at dinner, but Jess is holding back for awhile, as she is pregnant. Yes, I'm going to be a grandmother! Happy belated birthday wishes to your husband, Linda.
