Easy Egg Rolls and Lilly Dot

These are my easy go to for a quick meal or appetizer.  They are a delicious snack as well you can make in a pinch.  I like to use the shortcut of adding a bag of coleslaw mix, so it eliminates all of the chopping of cabbage, carrots, etc.   * If you don't want to fry these babies, you can bake them. Spritz tops of egg rolls with cooking spray. Bake at 425° for 10-15 minutes or until lightly browned. 


Fry the ground pork...drain and then add the coleslaw mix.  Cook until wilted and shake in some Oyster sauce.  Mix.  Add 1 heaping tablespoon of the mixture to the egg roll wraps and wrap like a diaper.  Seal with a drop of water to edge and then fry until golden brown.

Yield: 12-14

Spring Rolls With Sausage

An easy spring roll made with ground pork sausage

INGREDIENTS:


  • 1 pound New York Ground Pork Sausage
  • 1 bag of Coleslaw Mix
  • 1 package Egg Roll Wraps - 1 pound
  • Oyster Sauce- two or three big shakes
  • oil for frying

INSTRUCTIONS


  1. You start by frying the sausage in a skillet.....I use a large wooden spoon to break up the sausage into pieces. When cooked, drain and add your bag of coleslaw mix.
  2. Stir and cook until wilted and blended in. I add 2 or 3 big shakes of oyster sauce....Stir.... Taste. You can add to to suit your taste. Blend together and then take your egg roll wrap, add a heaping tablespoon of meat mixture and wrap like a diaper. Seal with a drop of water. Don't stack them on a plate. They will stick together.
  3. Pour some vegetable oil into a skillet, wok or any shallow pan.
    Heat your skillet....medium temp. Fry or deep fry the spring rolls until golden brown on all side. Remove and drain.
  4. Serve with Plum sauce or hot chili sauce. These are addicting and so easy to make.

We have been spending time with our Great Granddaughter Lilly Dot.  She just went home today.  We have been swimming, playing games, movies and shopping. Lilly is 7 years old. We bought her a new tablet while she was here.
