Mix your batter with your choice of juice....I sometimes add some cinnamon. At this point, you can put the batter in a squeeze bottle or use a cookie dough scoop.
Preheat shortening or oil in a saucepan or deep fryer. When the temperature is 325 degres, start dropping some batter into the hot oil. They cook fast.....let them brown on both sides and remove them. I use a paper-towel so they can drain off the excess oil. I then drop them into a mixture of sugar and cinnamon. These are so light and they taste like donuts. Feel free to experiment. Some are ball shaped, some are all different shapes.
Serve with syrup or eat plain.
Also try adding fruit or chocolate to the batter. You can also coat them in powdered sugar
If you want veggie pancake balls, feel free to add your favorite chopped vegetables to your batter. Get creative as you want.
In this photo, I served the pancake balls with powdered sugar, added some whipped cream, raspberry syrup and topped them off with some mint leaves and a raspberry. I decorated the plate with the syrup. Enjoy!

Those look so yummy! I just had dinner and now I want something sweet! Thanks for the nice comment on my fall tablescape. I think I've used those little burlap wrapped votives in the last 3 tablescapes!
