Cupcake Heaven

We were invited to a dinner party and the hostess asked me
to bring dessert.  I decided to make cupcakes.

I made different flavors.




I made Chocolate cupcakes filled with chocolate mousse and then added chocolate frosting with a piece of Reeses peanut butter cup.
I actually used Jacqueline's recipe from: http://purplechocolathome.blogspot.com/2010/05/purple-chocolate-cupcakes.html
It makes a great statement with the purple.  I changed it up abit with chocolate mousse filling and omitted the candied pansy.



 The second cupcake is Strawberry , filled with strawberry filling and then topped with fresh strawberry buttercream frosting....a fresh strawberry is sitting on top.      Sprinkles Strawberry cupcake

                                         Sprinkles Strawberry Frosting

                                 Ingredients   makes 1 dozen cupcakes

                 1/2 cup whole frozen strawberries, thawed
                 1 cup (2 sticks) unsalted butter   - firm
                 pinch of coarse salt
                 3 1/2 cups confectioner's sugar - sifted
                 1/2 teaspoon pure vanilla extract

              


Key Lime Cheesecake dessert 


Here's the recipe I used.
Microwave Key Lime Cheesecake

3 Tablespoons melted butter
1/2 cup chocolate cookie crumbs
1 Tablespoon sugar

Combine the  crushed cookie crumbs with the melted butter
and 1 tablespoon of sugar.  Press crumb mixture into bottom of 4 ramekins.

8 oz. package of  softened cream cheese
1/3 cup sugar
zest of 1 key lime
2 tablespoons fresh key lime juice
1 egg

Mix the above ingredients until smooth.
Divide equally into the 4 ramekins.

Place in microwave for 2 minutes.
the top of the cheesecake mixture should look dry.
If not, microwave at 30 second intervals until tops appear dry.

Chill for 1 hour or more.
Garnish with whipped cream or berries and serve.

The last dessert is Lemon cupcake filled with lemon curd and a Lemon Buttercream frosting.  I garnished with a candied lemon wedge.

They were alot of fun to make and the best part was eating them.

  5. I am such a horrible baker! But it seems that is OK cause my hubby NEVER eats sweets!!! If I bring something home, I am on my own to eat it all.....NOT a good thing:):) These cupcakes are beautiful and sound delicious!!!! Last year, my daughters wedding cake was a chocolate cake with chocolate mousse filling and fudge frosting!!!!! Everyone said it was the best wedding cake they ever had! XO, Pinky
