How about using your coffee cup and a microwave for an easy dessert, breakfast, etc.
Here's an easy recipe for Apple cake.
Ingredients:
2 Tablespoons butter
3 Tablespoons dark brown sugar
1/2 apple, thinly sliced, and then cut in half.
1/2 egg
2 Tablespoons milk
Vanilla a few drops
1/4 cup self-rising flour
2 pinches cinnamon
Put 1 Tablespoon of butter, 2 Tablespoons of brown sugar and the apple slices in the bottom of the coffee cup. Microwave for 1 minute.
Soften remaining butter, mix in a measuring cup with remaining brown sugar until creamy.
Add milk, egg and vanilla. Beat with a fork to combine.
Add flour and cinnamon. Beat until smooth.
Swirl coffee cup, sprinkle with a pinch of cinnamon. Pour batter into cup, swirl once.
Microwave 1 minute. You can add your whipped cream for a lovely dessert.
Here's an easy Microwave Coffee cup quiche
Ingredients:
1 egg
1 Tablespoon milk
Salt and pepper
1/4 bagel or similar amount of bread
2 teaspoons of cream cheese
1/2 slice ham or ?
Dijon mustard
Fresh thyme leaves or chives
Beat egg and milk together with a fork in a coffee cup with salt and pepper to taste. Tear bagel into dime-sized pieces; stir in.
Add cream cheese, stir in. Tear ham into small pieces' add to mixture.
Sprinkle with thyme. Microwave for 70 seconds. Garnish with mustard and thyme or chives.
Enjoy!

Great idea for the apple cake. I have made mug brownies in the microwave. Not quite as good as the real thing, but great in a pinch!
