Crispy Spoon Cracker with Goat Cheese Mixture

Here's a different fun appetizer.  I would also call it unique, because you don't see this everyday.
You can be very creative with the cracker recipe, adding sesame seeds, Rosemary or whatever you fancy.
I thought I would share it again, in case some of you didn't see it.


I started out making a spoon stencil.  I traced a teaspoon, upside down onto parchment paper.
I cut out the spoon shaped stencil. Start by cutting inside or use a craft knife, so you have a perfect
stencil.  you can also make several by doubling the paper.



Preheat the oven to 350° F.  Makes 20 spoon crackers

For the Crispy Spoon shaped crackers:
1/2 pound butter
1 cup flour
1/2 teaspoon salt
4 or 5 egg whites


Topping:
1/2 cup goat cheese
1/2 cup cream cheese
1 cup sun-dried tomatoes. finely chopped
basil leaves for garnish.  Use small leaves and chop larger basil leaves.


Put the butter and salt in a mixer and blend.  Gradually add the flour then slowly beat in the egg whites.
Continue to mix until the dough is smooth.


Place the stencil on a buttered baking sheet.  Use a butter knife to spread 1 -2 Tablespoons of the batter into the stencil shape.
I decided to use a pastry bag.
Lift off the stencil and repeat this process to create 10 spoon shapes.
Bake in a pre-heated oven for 10 minutes or until a light golden brown on the edges.
Repeat this process to make another 10 spoon shaped crackers.


Goat Cheese mixture:
Put the goat cheese and cream cheese in a mixer and blend until well blended.
To assemble, top each cracker with a little goat cheese mixture and tomatoes.  Garnish with basil.
