Roasted Potatoes & Shrimp Appetizer

We were invited to dinner with some friends and I was asked to bring an appetizer.
I knew the menu was pizza, so I wanted to shy away from using bread.
I decided to make roasted potatoes, herb cream cheese, shrimp and dill.

It makes for a lovely appetizer and so elegant as well.  Just pop them in your mouth.

5 red potatoes or your choice of potato
2 teaspoons of olive oil
1/4 teaspoon salt
10 cooked peeled deveined medium shrimp with tails peeled off.
1/4 - 1/2 cup of Garlic Herb cheese spread or purchased Garlic Herb spreadable cheese.
Dill weed sprigs

 Preheat oven to 400°  Line baking sheet with foil or cooking parchment paper: lightly spray with cooking spray.


 Start out by washing and slicing potatoes about 1/4" thick or so.
I use a baking mat, so the potatoes don't stick.
Line the potatoes slices on the baking sheet.
Coat each one with olive oil and kosher salt.
Bake about 25 minutes, or until edges are brown.

Cool about 10 minutes.

Cut each shrimp lengthwise in half. To serve, spread about 1/2 teaspoon Garlic Herb Cheese Spread on each potato slice, top with shrimp and small dill weed sprig.  Makes 20 appetizers. Ta Da!
