I love salmon. Summer time is so wonderful for grilling. Easy and so yummy.
To change it up abit, I decided to make a mango salsa and potato waffles.
Who said your waffles have to be egg batter? I used mashed potatoes. It's perfect if you happen to have some leftovers. Get creative by adding cheese, corn, peppers, bacon etc. Just pour your potato mixture in your trusty waffle iron and have something different.
Cute them into quarters and serve. Great for breakfast too. My waffle iron happens to have a heart shape too.
Make some mango salsa to go with the fish.
Mango Salsa:
In a medium bowl, mix mango, red bell pepper, green onion, cilantro, jalapeno, lime juice, and lemon juice. Cover, and allow to sit at least 30 minutes before serving.

In a matter of a few weeks I'll throw a Dinner to celebrate dear daughter's Confirmation and I've been looking for a fish dish that would serve as dish but in a way of appetizer. And I love salmon. This would be a great idea... Not sure I'm brave enough for the potato waffle ;) but salmon and mango? Count me in.
