Hello friends, we are having lovely weather this time of year. Daytime temps are in the 70's & 80's. The nights are a wonderful 54 degrees. A great time to enjoy this beautiful autumn weather.
I set a table on the deck off our study. No mosquitos and a nice little breeze to enjoy cozy luncheon and tea. Pumpkins are a seasonal time so I am serving Pumpkin spice tea.
I love the cute little tin this Pumpkin spice tea came in. I enjoy drinking different kinds of tea. I made Cream of Broccoli, cheddar, potato soup last night. It is a favorite and it is one of the soups I shall be making for the Clogger's luncheon.
yield: 12 servings
A loaded potato soup with broccoli and cheese
prep time: 15 MINS cook time: 20 MINS total time: 35 mins
INGREDIENTS:
- 20 small potatoes -peeled and cubed
- 1 small onion- chopped
- 2 cloves of garlic minced
- salt & pepper to season
- 1/4 tsp. paprika
- 3 carrots - peeled and finely chopped
- 32 oz vegetable stock or chicken stock
- 3 cups broccoli florets - chopped
- 4 Tablespoons butter
- 1/3 cup flour
- 3 cups milk, or half and half or whipping cream
- 3 cups of grated cheddar cheese
INSTRUCTIONS:
- In a large pot, combine vegetable broth, garlic ,carrots and onions. Bring to a boil, cover and simmer for about 10 minutes, until the veggies are for tender. Add broccoli and simmer for about 5-10 minutes.
- Meanwhile, in another saucepan, melt butter, add flour, whisk and cook until golden brown. Whisk in milk and cook for about 5 minutes. Add cheese to mixture and stir until melted. Season with salt & pepper. Pour cheese mixture into the potato mixture and combine. If needed, add more milk or broth.
A perfect little Autumn table to enjoy a small lunch with tea.

ReplyDeleteSo pretty Linda but how do you say no mosquitos? Is it screened in? Or do you have a secret potion to get rid of those pesky insects. Your table is lovely and cozy and I know the memories of your mom's chairs has to make your tea time extra special. I think of my mom every day.
